Happy Tummies Marshmallow Surprise


We always knew it was Christmas when Mum made ‘Marshmallow Surprise’ for us. They were made with condensed milk, plenty of sugar and plain store bought biscuits. We LOVED them. I came up with this alternative so my kids can enjoy the same treat I had as a little girl. They taste remarkably similar and you can whip them up in a few minutes.


Christmas Gluten Free Marshmallow Surprise - Happy Tummies

 

Gluten Free Marshmallows Surprise Recipe 

 Wheat free, dairy free, soy free, rice free, egg free, can be nut free

Makes approx. 14 balls – you might want to double this recipe!

Ingredients:

100g organic desiccated coconut
50g raw or activated pecan nuts (swap for different nut or seeds if required)
8 medjool dates (deseeded)
10g raw organic cacao powder
1 tsp quality vanilla extract
2 tbsps quality full fat coconut cream
Eskal gluten free marshmallows
Extra organic desiccated coconut to roll balls in 

Method:

  • Use a Thermomix to make this or a food processor
  • Pop all ingredients except the marshmallows and extra desiccated coconut in the TM and blend on 9 for about 30 secs until nice and smooth
  • Cut marshmallows in half with kitchen scissors if they are large
  • Get approx. 1 tablespoon of chocolate mixture into your hand and work it around the marshmallow until it forms a ball
  • Roll in extra desiccated coconut
  • Pop in fridge to set


Tip
: If you are refined sugar free swap the marshmallow for a dried apricot or something similar – for us, it’s Christmas and we’re going to enjoy a treat :-)
